High Fibre Banana Bread

Ingredients

  • 1/3 cup brown sugar
  • 1 large egg
  • 200ml low fat natural yoghurt
  • 1 cup mashed banana
  • 30g dried apricots diced
  • 1 cup self raising flour
  • 1/4 cup wholemeal self raising flour
  • 1/2 tsp bicarbonate of soda
  • 2 tblsp oat bran
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
 

Method

  1. Whisk sugar, egg and yoghurt in a bowl.

  2. Fold in mashed banana and apricot, followed by dry ingredients.

  3. Spoon mixture into a lined loaf tin and bake at 160˚C for 50mins.
